First off, My favorite Berry is a Raspberry. I will eat them fresh, canned, frozen... etc. etc. Anyway I can get em. I love them to no end! So when you place them in a cookie, I get excited. The Fresh Market, Located in Wesport CT on the Post Road makes these delightful little suckers and I can't help but be bad at times, during lunch and buy a box. I'll call Kika and brag that I have a box of Raspberry Pillow Cookies sitting on my desk (She called me just in time for me to tell her of my magnificent purchase)
If you like a sugar/butter cookie and you love Raspberry like I do, then these are the cookies for you! Even though at times they like to over bake them just a tiny bit (which makes me frown) but I'll still buy it cause the filling is still the same lol
I like to eat the semi crispy edges first and then indulge in the thick raspberry preserve middle Which is the best part...
